Can you please tell me the protocol when handling the gluten-free crust for someone with Celiac Disease (cannot consume any amount of gluten)? Our standard gluten-free protocol is as follows:

  • Gloves are changed when preparing all gluten free options.

  • Gluten-free crusts are kept wrapped & frozen til used.

  • Gluten-free crusts are put onto a separate tray while making the pizza.

  • Toppings are housed at make station where all pizzas are prepared.

  • The pizza then goes into a convection oven separate from our main pizza ovens.

  • The dedicated gluten-free peel and cutter also remain in the back by the convection ovens where the pizza is then cut and put on a tray or box.

We do our very best to keep these pizzas gluten-free, but CANNOT guarantee, in a kitchen using as much flour as we do, a 100% gluten-free experience. We share the National Celiac Association website’s assessment that there will always be a high potential for cross-contact in a kitchen using gluten containing flour for regular pizzas and DO NOT recommend these pizzas for people at serious risk but rather people choosing to avoid gluten for non-life threatening reasons.

Do you have nutritional data available for your menu items? We do not have nutritional data or calorie counts for our menu items, but can provide list of ingredients used, by request.

Untappd encourages you to rate the beer you are drinking, earn the official Catch-a-Fire Pizza badge, share pictures of your beers, review our tap list, see what beers your friends are drinking and suggest similar drinks. https://untappd.com
